I’m ignoring the fact that it is supposed to snow today.
Spring is so close I can taste it.
The daffodils are starting to spring up in the yard, I can see the tiniest hint of baby leaves on our neighbor’s weeping willow, and…hockey season is officially over!
That must explain my penchant for salads right now. I don’t know what has come over me – but I cannot get enough of them. But sometimes, when I get on a kick like this, I run the risk of falling into a rut — eating the exact, same thing for days on end.
Then I get sick of them, which isn’t a good thing.
So I decided to go on a hunt for some yummy salad recipes. I figure flavor and texture variation will keep me excited and interested in salads for a lot longer than a week! It also increases the chances that I’ll hit upon a salad recipe that my boys will like too.
In the end, I found 8 delicious recipes to try. I’ve already made the Chicken Fajita salad, and my boys (including my salad-loathing husband) wolfed it down. I’m not so sure my little guys will like the spicy cucumber number, but I’m going to put it in my husband’s lunchbox tomorrow – I’ll bet he’ll love it.
