Ultimate comfort food: Chicken pot pie

Although my mother hates when I admit this, it’s the cold, hard truth: I was a latchkey child. When your parents divorce and your stay at home mom has to enter into the workforce to support the family, it happens. I know there were many, many occasions where my brother and I were lovingly taken care of by family (Nana, my uncle who was in college, and the babysitter around the corner) and we weren’t home alone.

But don’t feel sorry for me. I grew up street savvy. I have total stranger danger. I never open my front door for someone I don’t know and I’d never give up personal information over the phone. Weird noise outside? I’ll have every door locked and window slammed shut in 4.5 seconds.

One of the perks of living the latchkey child lifestyle was this: comfort food. I can’t eat chicken pot pie without feeling like it’s 1987. Earlier this week, I made a quick stop at the grocery store when I saw a big, fat, flaky, golden chicken pot pie in the ready to cook section. All I needed to do was put it on a baking sheet and slide it into the oven at 400 degrees.

That’s all it takes for my fat latchkey child dreams to come true.

As a kid, I’d crack open the freezer with glee to find small boxes of frozen pot pies. Sometimes I’d have to dig around before I hit the jackpot! Forty-five minutes in the oven and I would be in hog heaven. Or, chicken pot pie heaven.

These days, I don’t buy the frozen, stuffed with sodium and saturated fat pot pies. Awww, the good old days. Sure, that pie I bought at the ready-made counter was a moment of weakness. Usually, I will make a homemade pie. My kids like it well enough, but they aren’t dancing in their seat like I am.
