Stuffed mushrooms have been a favorite party appetizer for years. There are so many variations but this wonderful recipe by The Luna Cafe included many of flavors you would expect to find in a savory Thanksgiving stuffing. This time of year I start craving cooler temperatures and comfort food so I just had to try this recipe. The mushrooms are easy to make and have so much flavor from fresh herbs, spicy chorizo sausage and parmesan.
I modified the recipe slightly by making my own sourdough bread crumbs in lieu of the panko bread crumbs. And I deglazed the pan with a little white wine instead of apple cider vinegar. They were delicious and the perfect morsels of comfort to serve while watching the Olympics.
