We eat pancakes so often we have to mix it up on weekends. On Saturday’s morning I like to try new recipes that are fun, healthy and will cover Sunday morning because Mama doesn’t cook Sunday morning. In this post I’m going to cover some of our more recent favorite new pancake recipes. A couple may sound a little crazy (banana and bacon?) but you will be shocked at how good they actually taste. (By the way, I usually sub extra lean turkey bacon to keep it on the healthy side.) The train pancakes are a hit with my boy and Meyer lemon are a huge hit with my daughter. Brown Sugar Banana Bacon Pancakes
The sweet and salty combination will have your taste buds singing praises. For a healthier option I like to use uncurred turkey bacon with no nitrates and nitrites added.

Marvelous Meyer Lemon Pancakes
These truly are marvelous and my six year old agrees and requests these every week. PS, it’s a cheater recipe too, pick your favorite pre made mix and add the lemon for a completely homemade taste.

Watermelon Pancakes
What kid can resist and adorable pancake shaped like a watermelon. Certainly not my two. They even like to help out with the shaping. The two year old may not make perfect ‘waterlemons’, as he calls them, but he’s very proud and gobbles them up.
