I’m not really into making clever desserts for my kids since they’re happy with whatever popsicle or cookie I allow them after dinner. But I do have a special fondness for Jell-O because of my love for the 1980s commercials and the jingle that will be forever embedded in my brain.

Today I invite you to admire with me the handiwork of food blogger Victoria Belanger which I became aware of via her new book, Hello Jello. This is not the Jell-O served to you in the hospital. Or maybe it is, but it looks way better.
Some of her techniques will allow you to produce kid-friendly treats, such as layered desserts with special color schemes.
And some are for adults only, like this sparkling champagne and strawberries recipe.
